How to Make Nacho Chicken Dip in a Slow Cooker

You guys ever have a day…or maybe week or month…where you don’t know if you are coming or going? Well, I was having one of those days. Supper needed to be on the table fast, so it needed to be simple. Then I remembered I had been wanting to make this Nacho Chicken Dip that I adapted from Gooseberry Patch’s Almost Homemade…and that I thought it might go well OVER chips, as well as with chips! So some of us had it with chips, while others had it over chips (think taco salad-esque). It was wonderful!

Ingredients

  • 16 oz can refried beans
  • 12 oz can chicken drained and shredded
  • 16 oz jar chunky salsa
  • 8 oz shredded Mexican-blend cheese
  • tortilla chips

Instructions

  • Spray your 4-quart crock pot with cooking spray.

  • Layer your ingredients in this order: beans, chicken, salsa, cheese.

  • Cover and cook on high for 1 hour or low for 2 hours.

  • Serve either on top of chips or with chips as a dip.

    Hey there Lou we messaged back and forth once about whether or not this would work in a 2-quart that I keep in my office and I never got back to you sorry the world has turned upside down since then but it does work in a 2-quart it’s a tight fit it’s almost a full pot but it does work in a 2-quart so if you’ve got a little party pot at your office or in your camper at to court this recipe will work.     What size of crock pots are good for 2 people? I like to have the recipe make 4 So we can have left overs. I also would like to have a browning unit in it. We are elderly, and Are trying to replace our big crock pots etc. with smaller ones. Help please.❤️👵🏻🐶 😱
